A gentle mousse like bead which lingers forever. A good touch of yeast autolysis adds to some very enjoyable citrus and faint blossom character. Very soft and approachable now, it will even improve further in the bottle.
In 1988, when the Crystal Brooke Vineyard was first founded, the land was dotted with enormous boulders that lay just beneath the surface (some the size of small cars!). Though it had been practice during this time to have the boulders removed, or to work around them, the winemakers at Crystal Brooke decided to have the massive rocks crushed, mixed in with organic matter and fertiliser and then added back into the soil. This created a hugely fertile environment and the Crystal Brooke vines have flourished, healthy and bursting full of varietal flavour, ever since.
